Recipe of the Season: Broccoli & Blue cheese Salad

130 calories per serving, makes 6 servings (side dish)

Broccoli head, steamed or boiled

75g Blue cheese

2 x heaped dessert spoons Greek yoghurt

50g walnuts

Diced Pancetta, pan fried

Sprig of fresh basil

Sprig of fresh chives

Method:

Break up the broccoli head and either steam or boil until tender.

In a separate pan, add the blue cheese, yoghurt and herbs and melt until a runny consistency

Add in the fried pancetta and walnuts and give the sauce a good mix

Pour over the broccoli and mix gently together

Serve on its own or with a protein - delicious warm or cold
